I'm not understanding exactly what you're saying. The Haunted House Cake is the bonus goal recipe on the Loretta's Oven, the only way I can see that you would've spent 20 gems is if you hit the "Skip" button in the goal that asks you to serve the recipe 10 times.

If this is where you spent the gems: you would've already unlocked that recipe in the previous goal so the only thing that would happen by skipping for gems is that you would be awarded the coins and xp.
